Choco-Banana Bread


Easy to bake, moist and yummy banana bread with chocolate chips….



Ingredients:


2 Ripe bananas
1 cup all-purpose flour
1/4 cup Soft butter
1/4 cup castor sugar
1/2 tsp baking powder
1/4 tsp baking soda
2 tbsp Milk at room temp
1 tbsp chocolate chips
Mix together 1 tsp cocoa powder in 1 tbsp milk


Method:

  • Sift together flour, baking powder, and baking soda in a bowl.
  • In another bowl beat together sugar and butter till creamy.
  • Mash bananas in a third bowl and add to the butter mix.
  • Now, slowly add the dry ingredients to wet and beat well for 2-3 min by adding milk and
  • Fold in chocolate chips.
  • Pour the batter in a greased and lined loaf tin. Swirl gently the cocoa powder mixture.
  • Bake in a pre-heated oven at 170 deg C. for 20 - 25 min or until a toothpick inserted in the center comes out clean.
  • Cool completely, cut into slices and serve.

Cornmeal Bread (No-yeast bread)


Easy-to-make and No- yeast bread recipe prepared with corns and olives …



Ingredients:

2 cups flour (maida)
1/2 cup cornmeal or maize flour
1 tsp baking powder
1 ¼  tsp salt
1 ½  tbsp butter
4 tbsp curd
3 tbsp cream
2-3 tbsp boiled corns
1 tbsp olives, chopped
1 tsp red chilli flakes
1 tsp dried herbs
1/2 tsp black pepper powder



Method:

  • In a bowl, shift flour, cornmeal, baking powder and salt.
  • Add butter and mix well to get lightly crumbly mixture.
  • In another bowl, whisk curd and cream together.
  • Add corns, olives, dried herbs, chilli flakes and pepper powder.
  • Add this mixture to dry ingredients and mix well.
  • With enough water or milk (appox.1/4 cup) make a smooth dough.
  • On a floured surface, roll dough into a loaf. Place dough into greased baking tin.
  • Bake in a preheated oven at 180 deg. C for 25-30 min.
  • Cut into slices and serve with some spread.

Whole-wheat Bread Loaf


Healthy Whole-wheat bread recipe with olive-onion topping…


Ingredients:

1 ½ cups whole-wheat flour
1/2 cup warm milk
1/4 cup olive oil
1 tbsp yeast
1 ½ tsp sugar
1 tsp salt

For Topping: (optional)

Few onion strips
3-4 olives, chopped
1 tbsp olive oil

Method:

  • Mix milk, yeast and sugar together in a bowl, keep it in a warm place for yeast to activate for 5-7 min.
  • In another bowl, shift flour and add salt; add in yeast mixture and half of oil to it.
  • Now using enough water and oil, knead a soft and elastic dough.
  • Place the dough in a oiled bowl, cover with cling film and leave to rise until doubled in size at least for 1 ½ hours.
  • Punch the dough down and place to the floured board. Knead for another few min then shape into a loaf .
  • Add the toppings and place in greased loaf tin; keep covered for another 30 min.
  • Bake in a preheated oven at 190 deg C for 20- 25 min.
  • Take the bread out of the tin; it should sound hollow when tapped on the bottom.
  • Allow it to cool thoroughly on a wire rack before slicing.

Plaited Loaf


Beautiful plaited loaf with lovely golden crust accompanied with any soup…

Ingredients:


1 recipe basic dough
1 tsp olive oil

Method:



  • Grease the baking sheet. Punch the dough after first proving and divide into 3 equal pieces.
  • Roll to shape each piece into a long thin strand.
  • Lay the strands out on the lightly floured surface Take three strips together and begin plaiting with the centre strand, tucking in the ends.
  • Cover loosely and leave to rise in a warm place for 30 min.
  • Preheat oven to 190 oC. Brush with olive oil and bake until golden, for 30-40 min.
  • Turn out onto a rack to cool.

Banana Bread


Rich, delicious and slightly moist banana bread recipe.



Ingredients:

Method:

Focaccia Bread


Focaccia is Italian bread topped with herbs or other toppings like onion, olives, cherry tomatoes...



Ingredients:


9 inch loose bottom tin
2 tbsp olive oil

For topping

5 -7 cherry tomatoes
1 tsp mixed herbs
1 small onion, cut into thin slices
2-3 tbsp cheddar cheese, grated
Few black olives         

Method:

  • Knead dough with 1 tsp of mixed herbs.
  • Press the dough in a loose bottom greased tin and leave for second proving for about 15-20 min. 
  • Now lightly milk wash the dough (for milk wash: mix together 2 tsp milk, 1 tsp water and 1 tsp oil)
  • Make dents in dough with knuckle. Spoon 2 tbsp oil in dents, sprinkle toppings over the dough.
  • Bake at 210 oC for 20-25 min in a preheated oven.
  • Serve hot with any dip of your choice.

Home made Flour Tortillas


Easy to make home made tortilla recipe.

Ingredients:


2 cups all-purpose flour
3/4 cup warm water
1/4 tsp Baking powder
1/2 teaspoon salt
3 tablespoons olive oil

Method:

  • In a large bowl, combine flour, baking powder and salt. Stir in water and oil.
  • Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes.
  • The dough has to be smooth, not too sticky or too tight.
  • Divide dough into eight portions. On a lightly floured surface, roll each portion into a 7-in. circle.
  • In a large nonstick skillet coated with cooking spray, cook tortillas over medium heat for 1 minute on each side or until lightly browned.

Garlic Buns


Easy, tasty, spongy  homemade garlic buns.



Ingredients:

1 ½ cup Plain flour       
3/4 tbsp Yeast 
1/2 cup Water  (add if more is needed)
3/4 tsp Salt      
1 tbsp Sugar
1 tbsp Olive oil/ any cooking oil           

For the garlic Spread

3-5 flakes Garlic chopped very fine      
2 tbsp Butter softened  
1 tbsp oregano (optional)

Method:


  • Warm the water (not very hot, just warm) and add the yeast, sugar and salt in it and mix well. After a minute mix again to make sure the yeast gets properly dissolved.
  • Take the flour in a big bowl and make a dent in the centre and add the mixed yeast water.
  • Knead the dough with oil to smooth and pliable (add 1 or 2 tbsp of water if water is needed, the dough should not be too stiff and dry, it should be soft, smooth and pliable)
  • Keep covered the bowl with either a clean wet towel or a cling wrap (wrap the bowl to cover it, not the dough).
  • After an hour, the dough should have raised double in volume. Again knead it little to make it smooth.
  • Divide into 6 equal balls and arrange it with enough gaps in a lined baking tray.
  • Make a small slit on top using a knife to fill the garlic spread. (not very deep, more on top)
  • Keep it aside in warm place for 45 minutes to make the balls double in size.
  • Mean while make ready the spread, by mixing the butter, garlic and oregano.
  • Pre heat the oven for 180°C and apparently fill the spread in the slit we made in the dough balls.
  • Bake for 20-25 minutes or till you get a golden coloured buns. Just cook for needed, over baking makes it harder.
