Roasted Bellpepper and Chilli Dip

Sweet and tangy dip can be enjoyed with any type of snack or wafers....



Ingredients:


1 Red bell pepper
1 dry red chilli, soaked in water
1 tbsp garlic
3 tbsp onion, roughly chopped
1 tomato, roughly chopped
Salt to taste
1 tbsp olive oil
Vegetable stock for consistency, if required

Method:

  • Sauté the onion, garlic and tomato on medium heat, for 5 minutes or until soft.
  • Grill bellpepper and roast to all sides evenly.  Place roasted bellpepper in cold water for 5 min.
  • When cool enough to handle, remove off the roasted skin, cut the peppers in quarters and remove seeds and membranes.
  • Blend all ingredients together.  If the sauce is too thick add stock, 1 tbsp at a time to make a smooth, but not thin, sauce.
  • Serve with snacks or wafers.

Orange Honey Mojito


Refreshing drink made from oranges comes with freshness of mint and sweetness of honey...



Serves: 1

Ingredients:

2 small oranges
Juice of 1 lemon
8-10 fresh mint leaves  
1 tbsp honey or to taste
1/2 cup orange juice
1/4 cup soda water

Method:

  • Peel and discard seeds of oranges and divide into small wedges.  
  • In serving glass, muddle mint leaves with the orange wedges, lime juice, and honey.
  • Add orange juice, soda water and ice cubes. Mix well, insert straw and serve chilled.

Apple and Oats Muffins

Moist and cinnamon flavored apple and oats muffins combined with goodness of almonds...



Ingredients:

1 red apple, finely chopped
2 tsp flour
1/2 tin condensed milk
50 gm oats
15 almonds, crushed roughly
1/4 cup whole wheat flour (atta)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon powder
1/2 cup oil
1 tsp vanilla essence

Method:

  • In a large bowl, shift wheat flour, baking powder, baking soda and cinnamon powder.
  • Add oats and crushed almonds to the flour mixture.
  • Now in separate bowl, beat condensed milk very well on high speed for 5-7 min.
  • Mix in vanilla essence and oil and beat again to incorporate well.
  • Now add flour mixture gradually and mix gently with a wooden spatula.
  • Mix chopped apples and flour separately then fold gently into the batter.
  • Transfer batter to the lined muffin tray at 180 degree C and bake for 20-25 min.

Orange Almond Cookies


Amazing, crispy Orange cookies with goodness of almonds...



Ingredients:

155 gm flour
115 gm white butter
90 gm castor sugar
1 tsp vanilla essence
1 tsp baking powder
1 tbsp orange juice
1/2 tsp orange zest
10-15 almonds

Method:


  • Soak almonds in warm water for 1 hr. Then remove the skin and slice into two. (like in picture)
  • In a large bowl, beat the butter by adding 1 tbsp sugar at a time till light & fluffy.
  • Add vanilla essence and orange juice mix well.
  • Add shifted flour and baking powder to the butter mixture and gently mix with light hands into form dough.
  • Refrigerate covered for 15-20. Divide dough into small balls and flatten and place almond flake on each cookie.
  • Bake in preheated oven at 160 deg. for about 20-25 min.
  • Remove & cool on wire rack.  

Note:

  • You can add crushed almonds in dough also.
  • Make in two batches and check before 5 min.

Mango Orange Frappe Shots


Get refreshed with sweet and tangy combination of mango and orange....



Ingredients:


1 mango, chopped into chunks
3/4 cup orange juice
1 lemon
1 ¼ cup soda
1 tsp sugar

Method:

  •  Refrigerate mango chunks for 1-2 hours. Squeeze out juices of orange and lemon.
  • Now blend together mango chunks and sugar until smooth. Add juices and blend again.
  • Add soda and ice cubes until all blended well.
  • Serve chilled in shot glasses.

Tawa fried Paneer Tikka


Famous Punjabi starter – Cubes of Paneer and vegetables soaked in spice, tangy marinade and then cooked to perfection....



Ingredients:


300 gm Cottage Cheese (Paneer)
1/2 each red-green-yellow bellpeppers
1 onion

For Marinade:

3/4 cup hung curd
A pinch turmeric powder
1 tbsp oil
1 tsp dry mango powder (amchoor)
1/4 tsp black salt
1 tsp chaat masala
1/2 tsp garam masala
Coriander leaves, chopped
1 ½  tbsp ginger-garlic paste
1 tsp red chilli powder
1 tsp kashmiri lal mirch
1/2 lime
1 tsp cumin powder
Salt to taste
Oil for pan frying

Method:

  •  Cut paneer, bellpeppers and onion into 1” cubes and keep aside.
  • Mix all ingredients for marinade and keep aside.
  • Brush the marinade to the paneer and refrigerate for 1 hour.
  • Add the left marinade to the vegetables and refrigerate.             
  • Arrange paneer and vegetables in skewers.
  • Heat oil in a non-stick griddle tawa) and fry marinated paneer and vegetables till golden brown from all sides.
  • Garnish with coriander and lemon slices.
  • Serve hot paneer tikka with green chutney.

  • If using griller, soak wooden skewers in water for an hour.
  • Add lime juice just before using marinade.

Whole Wheat Noodles


Enjoy your tea-time with healthy Whole wheat noodles, made from left over chapatis/Indian flatbread....



Serves: 2

Ingredients:


5 whole wheat chapatis / rotis/Indian flatbread
1 medium onion, chopped lengthwise
1/2 capsicum, chopped lengthwise
1/2 cup cabbage, shredded
4-5 garlic cloves, finely chopped
1 tsp vinegar
1 tsp pepper powder
1 tsp soy sauce
3-4 tsp tomato sauce
2 tbsp olive oil
Salt to taste

Method:


  • Roll chapatti into thin cylinder shape and then cut into thin strips lengthwise
  • Heat oil, add onion and garlic saute until light browned. Now add cabbage and capsicum, cook them for a minute.
  • Add soy sauce, tomato sauce, vinegar and pepper powder and mix well.
  • Cook till the vegetables turn slightly soft and add salt to taste.
  • Now add the chapathis and mix well. Simmer for a min or two and turn off flame.
  • Enjoy hot with tea/coffee.

No Bake Truffle Slices


Relish yourself with easy to prepare, crunchy and chocolaty truffle slices....



Ingredients:


200 gm Marie biscuits, crushed to very fine pieces (don’t grind)
200 gm cooking chocolate
1/2 cup crushed dry fruits and raisins
100 gm cream
1/2 tsp vanilla essence
8” loaf tin

Method:

  • Crush biscuits and mix essence with it. Add dry fruits and raisins.
  • Heat cream in a small non stick pan on a low flame (or microwave for 50 sec), add chopped chocolate to it and remove from flame, stir till chocolate melts completely.
  • Add more than half of the truffle to the biscuit mixture and mix well.
  • This mixture should be able to bind when held firmly in your palm.
  • Line the loaf tin with aluminum foil with extra foil on all sides.
  • Press the mixture into tin and press with figures to level. Keep in freezer for 10-15 min.
  • Remove from freezer and de-mould on to wire rack with a plate set under it.
  • Microwave truffle for 10-15 min and pour over with the base facing you. Cover and level with a palette knife.
  • Set in freezer again for 15 min till set. Cut into small pieces with knife and serve .

Mango Banana Smoothie


Easy and yummy smoothie can be made in no time…..


Ingredients:


1 cup bananas, chopped
1/2 cup yoghurt chilled
2 cup mango, chopped

Method:

  • Blend all the ingredients in mixer on high speed till sooth consistency.
  • Pour in glasses and serve chilled with ice cubes.

Breakfast Buns


Enjoy breakfast with buns stuffed with vegetables and cheese....


Ingredients:


2 leftover buns
1 potatoes, chopped
1/4 cup peas
1 onion, finely chopped
1/4 cup carrots, chopped
1/4 cup green onion
1 green chilli, chopped
1/2 capsicum, chopped
8-10 olives
Cheese, grated
1 tbsp cornflour in 1/4 cup water
¼ tsp chilli flakes
½ tsp black pepper
Salt to taste
3 tsp tomato ketchup
1 tbsp butter

Method:


  • Chop vegetables in small cubes and keep aside
  • Heat butter in a pan, add onions and green chilli and sauté onions to light pink color.
  • Now add all chopped vegetables and salt, chilli flakes and pepper.
  • Cover and cook for 2-3 min then add tomato ketchup and mix.
  • Add cornflour mixture and cook for 4-5 min till vegetables turn soft.
  • Scoop out buns and fill vegetable mixture and cover with grated cheese.
  • Grill in a preheated oven for 5 min or till cheese melts.
  • Serve hot with tea or coffee.
