Tutti-Frutti Bites


These little bites are perfect with a cup of tea, on-the-go and  for the kid’s parties….


Ingredients:

1 cup All purpose flour
100 gm butter
3 tbsp castor sugar
3 tbsp tutti frutti
1 tsp cold milk
1/4 tsp salt
Toothpicks (optional)

Method:

  • Sieve the flour and salt together. Rub butter into the flour with fingertips till a crumbly mixture. Now add sugar and tutti-frutti and mix again.
  • Add little milk at a time and make cookie dough.
  • Shape dough onto a rectangular block. Now cut small cubes of equal size.
  • Insert toothpick in each cube and keep in fridge for 10 min.
  • Bake into a preheated oven at 170 deg. for 12-15 min.
  • Cool and serve.

Oatmeal Cookies


A simple recipe for tasty and crunchy Oatmeal cookies. Enjoy with a glass of warm milk….



Ingredients:                                                                                               

3/4 cup grounded oats
1/4 cup whole wheat flour
1/3 cup butter                                                 
4 ½  tbsp powdered sugar
1/2 tsp baking powder
1 tsp vanilla essence
2-3 tbsp crushed nuts (I used almonds)


Method:

  • Beat sugar and butter until light and fluffy.
  • Add vanilla essence and beat once again.
  • Now add oats, flour and baking powder.
  • Fold in crushed nuts and make a dough.
  • Make cookies and place on greased baking tray.
  • Bake in a preheated oven for 15-20 minutes at 170 deg C.
  • Leave in the tray for 10 minutes, transfer onto wire rack to cool.
  • Store cookies in an airtight container.

Choco-Coffee Biscuits


Yummy biscuits with a flavor of coffee and crunchiness of chocolate chips…



Ingredients:

1 cup all purpose flour
85 gm butter  
1/4 cup powdered sugar
1 tbsp instant coffee
1 tbsp hot water
1/4 tsp baking powder
1 tbsp chocolate chips


Method:

  • Combine instant coffee and hot water.
  • Shift flour and baking powder in a mixing bowl.
  • Beat sugar and butter until light and fluffy.
  • Now add coffee mixture and butter mixture to the flour and mix gently.
  • Fold in chocolate chips and make a dough.
  • Shape the dough with cookie cutter and place on greased baking tray.
  • Bake in a preheated oven for 15-20 minutes at 170 deg C.
  • Leave in the tray for 10 minutes, transfer onto wire rack to cool.
  • Store in an airtight container.

Custard Cookies


Super-simple and soft cookies flavored with custard powder….


Ingredients:

3/4 cup all purpose flour
3 tbsp custard powder
1/3 cup + 1 tbsp icing sugar
1/2 cup Butter
1-2 tbsp Milk (if required)
1 tsp Vanilla essence

Method:

  • Sift together flour and custard powder. Keep aside.
  • In a mixing bowl beat together butter and icing sugar until smooth and creamy.
  • Add the flour mixture and add vanilla extract and mix well. (If the dough is stiff, add milk as required.)
  • Shape the dough according to your choice. Place them on greased baking tray.
  • Preheat oven to 175 Deg C. Bake for about 10 to 12 minutes.
  • Leave it on the baking tray for few minutes and then transfer to a wire rack to cool.

Red Velvet Creamy Pops


This Valentine's day surprise your loved ones with these cookie pops filled with cream cheese frosting….



Ingredients:


120 gm all purpose flour
2 tbsp cocoa powder
50 gm castor sugar or powdered sugar
60 gm butter
1/2 tsp baking powder
2 tbsp milk
1/2 tsp vanilla essence
Few drops red color (adjust according to the color brand, I used Wilton color)

For the Cream Cheese Frosting:

2.5 oz. cream cheese
1/2 tsp vanilla essence
3/4 cup icing sugar + extra for sprinkling
Lollipop sticks

Method: 

  • Shift flour, cocoa powder and baking powder together and keep aside.
  • In a bowl, cream butter and sugar till light and fluffy mixture.
  • Add vanilla essence and beat again. Add all the dry ingredients.
  • Mix color and milk together and add to the flour mixture. Combine all the ingredients gently to form a dough.
  • Preheat oven to 180 deg C.
  • Roll out the dough to 1/8 inch thickness and cut into heart shape with cookie cutter.
  • Place cookies on baking sheet and bake for about 7-8 min or till done.
  • Cookies should be soft at this stage, not crisp. Cool them completely.
  • Using an electric mixer beat the cream cheese and vanilla together.
  • Slowly add the powdered sugar until smooth and thick.
  • Turn bottom of the cookies over and spoon a little frosting in centre.
  • Press a lollipop stick into the frosting, and then gently press another cookie on top.
  • Keep cookies aside to dry a bit to hold sticks and while serving sprinkle some icing sugar.

Whole-wheat and Oats Cookies


Healthy and crispy cookies prepared with whole-wheat flour, oats and tutti-frutti….


Ingredients:


60 gm wheat flour
60 gm oats
70 gm white butter
55 gm sugar
1 tbsp custard powder
1/2 tsp baking powder
3-4 tbsp tutti frutti
2 tbsp milk


Method:

  • Grind oats to a coarse powder. Add to shifted flour and baking powder.
  • In a bowl, cream the butter by adding 1 tbsp sugar at a time till light & fluffy.
  • Add milk and mix well.
  • Add in dry ingredients and gently mix with light hands into form dough.
  • Fold in tutti frutti. Roll dough into a log and wrap in foil and keep in fridge for 20 min.
  • Divide the log into equal sized rounds (appox.10-12) and place on greased baking tray.
  • Bake in preheated oven at 170 deg. for about 12-15 min. (keep watch after 10 min.)
  • Remove and cool on wire rack.

Buttermilk Scones


Simple and easy-to-make Scones… can be enjoyed with a dash of butter or any dip.





Makes 6-7

Ingredients:


100 gm plain flour
2 tbsp cold butter
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 tsp dried herbs
1/2 cup minus 2 tbsp buttermilk

Method:

  • For buttermilk mix equal amount of water and curd and keep aside.
  • Shift all the dry ingredients in the bowl.
  • Rub in the butter with fingertips to get mixture resembles breadcrumbs.
  • Gradually pour buttermilk and mix well to form a soft dough (use buttermilk as required)
  • Roll out the dough about 1/2 inches thick and cut out rounds of 2 inch with a cutter.
  • Bake at 200 deg C for 10-12 min or until golden.
  • Serve warm or at room temperature.

Spicy Raisin Rock Buns


Aromatic buns made with raisins, mix spices to be enjoyed with tea or coffee…..



Ingredients:


115 gm plain flour
1 tsp baking powder
45 gm brown sugar
1/4 cup raisins
1/8 tsp ground ginger
1/4 tsp mixed spice (grounded cardamom, black pepper, cinnamon)
25 ml sunflower oil
2-3 tbsp milk

Method:

  • Shift flour and baking powder, and then stir in the sugar, raisins and mixed spices.
  • Mix in oil and milk, stir into the mixture to make dough which just binds together.
  • Preheat oven to 200 deg C, lightly grease baking tray.
  • Make small rounds with light hands or just spoon the mixture on baking tray.
  • Bake for 15-20 min until golden. Cool on wire rack.

Chocolaty Cinnamon Cookies

Celebrate "World Food Day"

Relish yourself with cinnamon flavored cookies dipped in a bit of chocolate…


Ingredients:


1 cup Flour
75 gm white butter
5 tbsp castor sugar
1/2 tsp cinnamon powder
1/2 tsp baking powder
1/2 cup semi-sweet grated chocolate
1 tsp butter

Method:

  •  Sift Flour, cinnamon powder, baking powder in a bowl and mix well.
  • In a large bowl, beat the butter by adding 1 tbsp sugar at a time till light & fluffy.
  • Add flour mixture and gently mix with light hands to form dough. (Add 1 tbsp of milk, if required)
  • Roll out dough into disc and cut into desired shape with cookie cutter.
  • Bake in preheated oven at 160 deg C for about 15-20 min.
  • Remove & cool on wire rack.              
  • Melt chocolate on double boiler; add butter and stir with a wooden spoon and until it has completely melted.
  • Dip one end of each cookie in the melted chocolate and place it on baking sheet. Repeat with all cookies.
  • Keep in the refrigerator for about 10 minutes, or until the chocolate has hardened.

Coconut Cookies


Easy to make, Coconut flavoured crispy cookies….





Ingredients:

100 gm all purpose flour
50 gm castor sugar or powdered sugar
50 gm desiccated coconut
60 gm butter
1/4 tsp baking powder
1 tbsp milk
1/2 tsp vanilla essence


Method:

  • Shift flour and baking powder together and keep aside.
  • In a bowl, beat butter and sugar till light and fluffy mixture.
  • Add vanilla essence and mix.
  • Add in the flour, coconut and milk and form into dough.
  • Preheat oven to 180 deg C.
  • Divide dough into small balls and flatten them and gently press cookies with a fork.
  • Place cookies on baking dish and bake for about 15 min or till done.
  • Cool and serve.

Almond Oats Biscotti

Crispify your tea-time with almond-oats biscotti ...

Make: 10 biscotti






Ingredients:


1/2 cup All purpose flour   
1/4 cup oats    
1/2 tsp baking powder           
1/2 tsp baking soda    
1 tsp vanilla essence           
1/4 cup Sugar
1/4 cup almonds, crushed           
1 tbsp oil         
1/8 cup milk    

Method:


  • Sift the flour, baking powder and baking soda. Add oats, sugar and crushed almonds and mix well.
  • Add oil, vanilla essence and combine well to a crumbly mixture.
  • Now by adding milk, knead into soft dough.
  • Roll dough into a log on floured surface. Place it on greased baking dish or baking sheet.
  • Bake at 170 degree in preheated oven for 20-25 minutes.
  • Remove and cool for 10 min.
  • Slice diagonally with sharp knife into equal size pieces.
  • Arrange them on baking sheet, cut side down and bake again for 10 min at 150 deg C.
  • Flip them and bake again for 5 min.
  • Cool and keep in air -tight container. Serve with tea or coffee.

Orange Almond Cookies


Amazing, crispy Orange cookies with goodness of almonds...



Ingredients:

155 gm flour
115 gm white butter
90 gm castor sugar
1 tsp vanilla essence
1 tsp baking powder
1 tbsp orange juice
1/2 tsp orange zest
10-15 almonds

Method:


  • Soak almonds in warm water for 1 hr. Then remove the skin and slice into two. (like in picture)
  • In a large bowl, beat the butter by adding 1 tbsp sugar at a time till light & fluffy.
  • Add vanilla essence and orange juice mix well.
  • Add shifted flour and baking powder to the butter mixture and gently mix with light hands into form dough.
  • Refrigerate covered for 15-20. Divide dough into small balls and flatten and place almond flake on each cookie.
  • Bake in preheated oven at 160 deg. for about 20-25 min.
  • Remove & cool on wire rack.  

Note:

  • You can add crushed almonds in dough also.
  • Make in two batches and check before 5 min.

No Bake Truffle Slices


Relish yourself with easy to prepare, crunchy and chocolaty truffle slices....



Ingredients:


200 gm Marie biscuits, crushed to very fine pieces (don’t grind)
200 gm cooking chocolate
1/2 cup crushed dry fruits and raisins
100 gm cream
1/2 tsp vanilla essence
8” loaf tin

Method:

  • Crush biscuits and mix essence with it. Add dry fruits and raisins.
  • Heat cream in a small non stick pan on a low flame (or microwave for 50 sec), add chopped chocolate to it and remove from flame, stir till chocolate melts completely.
  • Add more than half of the truffle to the biscuit mixture and mix well.
  • This mixture should be able to bind when held firmly in your palm.
  • Line the loaf tin with aluminum foil with extra foil on all sides.
  • Press the mixture into tin and press with figures to level. Keep in freezer for 10-15 min.
  • Remove from freezer and de-mould on to wire rack with a plate set under it.
  • Microwave truffle for 10-15 min and pour over with the base facing you. Cover and level with a palette knife.
  • Set in freezer again for 15 min till set. Cut into small pieces with knife and serve .

Raisin Scones


Enjoy, Teatime treat with quick and easy Raisin scones….


Ingredients:


170 g flour
3 tbsp powdered sugar
2 ½ tsp baking powder
1/8 tsp salt
70 gm cold butter cut in pieces
2-3 tbsp raisins (as per your taste)
115 ml milk (add 1-2 tbsp if reqd.)

Method:


  • Shift the flour, baking powder, sugar and salt into a bowl.
  • Add the butter; mix it with fingertips to a crumbly mixture.
  • Pour milk slowly and stir with a fork or hand to form a soft dough.
  • Meanwhile preheat the oven to 220 oC. and grease a baking sheet.
  • Now roll out the dough about 1/4 inch thick.
  • Cut out into any desired shape with biscuit cutter.
  • Place on the prepared sheet and bake until golden, about 12-15min.
  • Cool on a wire rack and Serve or you can split and spread butter or jam also.

Carom Biscuits

Ingredients:


1 ½ cup flour/Maida 
1 tsp carom seeds (ajwain)
1 tbsp curd    
1/4 cup oil       
1 tsp ghee        
3/4 tsp salt       
4-5 tbsp milk

Method:

  • In a bowl, shift flour and add salt, oil, ghee, ajwain and curd. 
  • Now mix well to get a crumbly texture.
  • Knead it to smooth dough by using 1-1 tbsp milk at a time. (Add 1 or 2 tsp milk if required).
  • Dust the platform with some flour and roll dough into a thick disc.
  • With the use of cookie cutter, cut out biscuits.
  • Preheat oven to 180 oC and bake biscuits in a greased baking tray for 15 minutes or until the edges of the biscuit starts to turn golden brown in colour.

Snowfall Cookies


Satisfy your family’s desire of yummy cookies on this Christmas…..

Ingredients:


1 cup all purpose flour/maida
3/4 cup nuts, chopped (walnuts, almonds & cashew nuts)
1/2 cup butter, at room temperature
3 tbsp castor sugar
1/8 tsp salt
1 tsp vanilla essence
1/2 cup icing sugar/ castor sugar for coating and dusting

Method:

Preheat oven at 160 oC.
In a bowl, mix flour, sugar, salt and chopped nuts.
Add the softened butter and vanilla essence and knead lightly with fingertips to get crumbled dough.
Pinch off a little dough at a time and make small lime-sized ball.
Place them 2” apart on a lined baking tray and bake until uniformly browned, about 25-30 min.
(Bake for 2-3 min more, if feel bit uncooked but not more than 5 min)
When warm, roll in icing sugar until well coated, let them cool and store in an air-tight container for up to a week.

Chocolate Chip Cookies


Everyone’s favorite crispy cookies with chocolate chips making it an irresistible treat!




Ingredients:


1 cup Flour
75 gm white butter
6 tbsp castor sugar
1 tsp vanilla essence
1/2 tsp baking powder
2 tbsp rice flour
1/4 cup chocolate chips

Method:

  • In a large bowl, beat the butter by adding 1 tbsp sugar at a time till light & fluffy. 
  • Add vanilla essence and mix well.
  • Sift Flour, baking powder in another bowl and mix well.
  • Add this to butter mix and gently mix with light hands to form dough. 
  • (Add 1-2 tbsp of milk if required)
  • Fold in chocolate chips. Divide dough into small balls and flatten.
  • Bake in preheated oven at 160 oC for about 15-20 min.
  • Remove & cool on wire rack. Store in an airtight container.

Nutty Chocolate balls


Combination of biscuit and cocoa powder rolls out with goodness of nuts.


Ingredients:


8 Digestive biscuits + 4 Marie biscuits
2 tbsp chopped mixed nuts, chopped (I used walnuts & almonds)
2 tbsp cocoa powder
1 tbsp honey (adjust sweet according to taste)
1 tbsp butter
Desiccated coconut for coating

Method:

  • Crush biscuits roughly by hand or with rolling pin. Chop all the nuts roughly. 
  • Heat a pan and melt butter and honey in it. (You can microwave for 30 - 40 sec)
  • Add cocoa powder and take the pan off the flame.
  • Add the crushed biscuits and nuts and mix well to form semi solid dough. 
  • (Add 1-2 tsp of milk if it is hard to roll in a ball) 
  • Spread desiccated coconut in a plate.
  • Makes out small balls from the dough and roll them in desiccated coconut. 
  • Arrange all the balls in a flat dish and refrigerate till use.
