Smoked Macaroni Pie


Treat yourself with macaroni in pie form with smoky flavor…



Ingredients:


1 cup boiled macaroni
1 cup white sauce
½ cup cheese
Salt & pepper to taste
1/4 cup chopped onions & capsicum
2 inch charcoal piece
2 tsp melted butter
1 clove garlic, crushed

Method:

  • In a pan, heat 1 tsp butter and add garlic, saute till light brown.
  • Mix in boiled macaroni and white sauce with salt & pepper.
  • Hold charcoal with tongs and heat directly over flames from all sides. It will turn red hot.
  • Place it in a small bowl and keep the bowl in center of cooked macaroni.
  • Drop butter over hot coal and cover with lid for 2-3 min.
  • Spoon the smoked macaroni in pie cases and add chopped capsicum and onions.
  • Sprinkle grated cheese and some tomato ketchup.
  • Bake till cheese melts and serve hot with any soup.

Home-made Pasta in Tomato-garlic Sauce


Relish yourself with home-made, whole wheat pasta cooked in tomato-garlic sauce….





Serves 2

Ingredients:

For the pasta:

75 gm whole-wheat flour (atta)
25 gm flour (maida)
¼ tsp salt
A pinch of semolina or rawa
Warm water to knead

For tomato-garlic sauce:

2 tbsp olive oil
1 tsp garlic, crushed
2 large tomatoes, finely chopped
4-5 basil leaves
½ tsp dried herbs
Grated cheese (optional)
Salt and pepper to taste

Method:


For the pasta:

  • In a large bowl, add both the flours with salt and knead like regular dough with some water (like chapatti dough).
  • Cover it and keep aside for half an hour.
  • Now roll the dough into thin round shaped disc on lightly dusted surface. Cut out into any shape you like. (I rolled into rectangular shape and cut into thin strips for fettuccine pasta)



  • Sprinkle rawa or suji on pasta so that it does not stick together while boiling.
  • Heat 2 ½ cups water in large pan add pasta and boil for about 3-5 min, it will take less time than dry pasta. (Do not overcook as it cooks in the pan also when you add it to the sauce.)

For the sauce:
  • Heat oil in a pan. Add garlic. Saute.
  • Add the chopped tomatoes with salt and pepper. Add basil leaves.
  • Add some water and cook till sauce consistency.
  • Strain the pasta out and add it to this pan. Toss it well.
  • Add dried herbs and grated cheese and serve hot.

Pasta with Spinach and Cherry tomatoes


A tasteful and healthy combination of pasta with spinach and cherry tomatoes.



Ingredients:

1 ½ cup fusilli pasta
1/2 cup white sauce
2 garlic cloves, minced
1/2 cup fresh spinach, chopped
1/4 cup cherry tomatoes, halved
Salt & pepper to taste
2 tbsp olive oil

Method:

  • Boil salted water in a large pot. Add the pasta and cook until tender, about 8 to 10 minutes. Drain pasta and keep aside. (Reserve some pasta cooking liquid to use further)
  • Heat 1 tbsp oil in small pan, add white sauce and mix in cooked pasta well.
  • Cook for a minute and turn off heat. 
  • Heat remaining oil in another pan, add garlic and cook until fragrant.
  • Add the spinach and tomatoes and cook until the spinach wilts, about 2 more minutes. Add the pasta and toss. Add salt, pepper, and the required amount of pasta cooking liquid and stir to combine.
  • Serve hot with some grated cheese.

Pasta in Parsley Pesto


Easy and yummy Pasta cooked in Parsley Pesto Sauce…


Serve: 2

Ingredients:


1 ½  cup Fusilli (you can take any Pasta)
1 tbsp olive oil
2-3 tbsp milk
Salt and Pepper to taste

For the Parsley Pesto:

1/2 cup parsley Leaves
2 tbsp roasted Peanuts
1 cube cheese
1/2 tsp chilli flakes
2 pods garlic
1 tbsp lemon juice
2-3 tbsp extra virgin olive oil


Method:

  • For Pesto, grind together all the ingredients under pesto. 
  • Boil pasta till well cooked, drain and keep aside.
  • Heat the olive oil in a saucepan. Add the pesto sauce and fry for a few minutes. 
  • Add the milk to get a sauce like consistency. Add the pasta and toss to coat well. 
  • Season with salt and pepper and serve hot.

Fusilli with Spinach and Corn


Delicious combination of spinach and corn with Fusilli pasta in cheese sauce.


Ingredients:


200 gm Fusilli, blanched
1 Onion, sliced
1/2 cup Spinach, chopped
1/2 cup Corns, boiled
1/2 cup Cheese, grated
1/4 cup fresh cream     
2 tbsp olive oil 
2 Garlic cloves, mashed           
Salt and black pepper powder  to taste
A pinch Nutmeg, grated           

Method:

  • Heat olive oil in a non-stick pan. Add garlic and onions and saute for 1 minute.
  • Add corn and mix well. Now add spinach and cook on a high heat.
  • Add black pepper powder and nutmeg and mix well.
  • Add pasta and cook on high heat. Add salt and mix.
  • Add cream and cheese and toss. Add some water and cook for a minute.
  • Transfer into a serving bowl and serve hot.

Cheesy Pasta with Bellpeppers


Pasta cooked in cheesy sauce with colorful bell peppers. Great for weekend breakfast.



Ingredients:


1 ½  cups cooked pasta (penne, macaroni or fusilli)
1/2 cup bell peppers, sliced (tricolor)
1 onion, sliced
1/2 cup milk
1 tsp butter
1/4 cup grated processed cheese
1/4 tsp dried mixed herbs
Salt and black pepper to taste

Method:



  • Heat the butter in a pan and sauté the onion and bell peppers for a min.
  • Add the milk and cheese and bring to a boil.
  • Add the mixed herbs, salt and pepper and mix well.
  • Toss the cooked pasta in the sauce and cook for 2 min or till sauce coats pasta evenly.
  • Serve hot with toast.

Italian Bean and Pasta Soup


Delicious Baked beans and pasta soup topped with red chilli flakes, oregano and salt and pepper. Serve hot with bread sticks or garlic bread.


Ingredients:


1/2 cup baked beans (canned)
1 medium onion, sliced
2 garlic cloves, sliced
1 cup chopped tomatoes
1/4 cup macaroni or fusilli
1 tbsp cornflour
1 tsp dried oregano
1 tsp red chilli flakes
2 tbsp cream (optional)
2 tbsp tomato ketchup
2 tbsp butter
Salt and pepper to taste
2 tbsp cheese, grated

Method:

  • Heat the butter in a pan; add the onion and garlic and sauté till the onion turns translucent.
  • Add the baked beans, tomatoes, macaroni, salt and 3 cups of hot water and bring to a boil. Simmer till the macaroni is cooked (approx. 8 to 10 minutes).
  • Dissolve the cornflour in 2 tbsp of water and add to the soup.
  • Add the oregano, cream, tomato ketchup, salt and freshly ground pepper and mix well.
  • Serve hot, garnished with the cheese.

Pasta Sandwich with Cheesy Dip


Open sandwich covered with shell pasta, cheese and served with cheesy dip.


Ingredients:

6 brown bread slices
1/2 cup shell pasta, boiled
1 onion, chopped
1/2 cup capsicum, chopped
1/2 cup tomato, chopped
4 tbsp tomato puree
Few drops capsico sauce
1/2 tsp chilli powder
4 tsp tomato ketchup
1/4 tsp garlic paste
Salt to taste
1/2 cup cheese, grated
2 tsp oil

For Dip

1/2 cup mayonnaise
1 tbsp tomato ketchup
1 tbsp cream
1 tbsp cheese spread
Salt to taste

Method:

Heat oil in a pan, saute onions, garlic paste, capsicum for 2 min till done. 
Add tomatoes, chilli powder, tomato puree, salt, and stir and cook this for 4 -5 min till oil separates. 
Now add pasta, capsico sauce, tomato ketchup, stir-cook for 2-3 min again on low flame and turn off.
Spread pasta on bread slice, cover with cheese and grill till crispy.

For dip: Mix all the ingredients of dip except tomato ketchup and whisk well for few min. Then add ketchup and serve with pasta sandwich.

Pasta Jalfrezi


Spicy, delectable, anytime Pasta recipe cooked in curry style.


Ingredients:


200 gm pasta, boiled
1 big onion, chopped fine
2 big tomato, grated
1 capsicum cut in squares
1 green chilli, chopped fine
1 tsp ginger-garlic paste
2 garlic cloves, chopped fine
1/4 tsp red chilli powder
1/2 tsp garam masala
2 tbsp tomato ketchup
1 tsp red chilli sauce (acc. to taste)
1 tbsp butter
2 tsp lemon juice
2 tsp olive oil
Salt to taste

Method:

  • Heat olive oil and butter in a pan, saute garlic, onions, green chilli, capsicum and ginger-garlic paste for 4-5 mins till done. (Do not over cook)
  • Add tomatoes, chilli powder, garam masala, salt and then the cooked pasta. Stir and cook this for few min till masala coat pasta well. 
  • Now add chilli sauce, tomato sauce, mix well and cook for 2-3 min again on low flame.
  • Sprinkle lemon juice on top and serve hot.

Pasta with Tomato Basil Sauce


Penne pasta tossed in tomato-basil sauce with parmesan cheese.  This Italian pasta recipe is delicious and easy to prepare.


Ingredients:


2 cups cooked penne pasta

For Tomato and Basil Sauce

1 1/2 cups tomato pulp
1 tbsp chopped garlic
1 onion, finely chopped
1 tsp chilli powder
2 tbsp tomato puree
2 tbsp fresh cream
12 to 15 basil leaves, chopped
2 tbsp olive oil
Salt to taste
4 tbsp cheese and few basil leaves (For garnishing)

For Tomato Pulp

Blanch tomatoes then put tomatoes under cold running water, cool them down and thereafter, remove skin, deseed and chop them.

Method:


  • Heat the oil in a pan, add the garlic and onion and sauté till the onion turns translucent.
  • Add the tomato pulp and cook till the sauce thickens.
  • Add the chilli powder, tomato purée, salt and 1/2 cup of water and bring to a boil.
  • Add the cream and basil leaves. Mix well and keep aside.
  • Just before serving, toss pasta in the sauce.
  • Sprinkle cheese and basil leaves and serve hot.

Pasta Salad


This easy Penne pasta salad is made with colorful vegetables and a seasoned mayonnaise dressing.


Ingredients:


3 cups Penne pasta, cooked according to package directions, drained and rinsed
Zest and juice of 1 lemon
3 cloves garlic, mashed and finely minced
3/4 cup mayonnaise, or more, to taste
1/4 cup sour cream
1/4 cup cottage cheese
1/2 cup finely chopped red capsicum (I used all three colored capsicums)
½ cup cucumber, diced
½ onion, finely chopped
¼ cup chopped scallions (I used only the green part)
1 tomato, halved or quartered lengthwise
1/4 cup finely chopped fresh basil leaves
Salt and black pepper (according to taste)

Method:


  • Put drained warm pasta in a large bowl and toss with the lemon zest and juice.
  • In a cup or small bowl, combine the garlic with the mayonnaise and sour cream. Stir into the pasta.
  • Add all chopped vegetables. Toss to combine thoroughly. If desired, add more mayonnaise. Taste and add salt and pepper, as needed.

Macaroni with Spinach Sauce Recipe

Macaroni rolled in delicious spinach sauce, a lovely and healthy change from the usual tomato sauce.





Prep & Cooking Time: 25 mts
Serves: 4 


Ingredients:

3 cups boiled macaroni
2-3 garlic cloves, finely minced
1 bunch spinach, blanched, drained and chopped fine
2-3 tbsps grated cheese
1 ½  tbsps butter
½ tbsp maida/flour
½ cup milk
freshly ground pepper to season
salt to taste


Method

  • Cook the pasta in boiling water with some salt. Drain and set aside.
  • Heat butter in a vessel, add garlic and saute for a mt. Add maida and saute for 2-3 mts. slowly add the milk and go on combining till it forms a creamy consistency.
  • Add spinach, grated cheese, salt and pepper to taste and mix.
  • Add macroni, mix well and cook for few minutes, turn off heat.
  • Garnish with grated cheese and serve warm
