Potatoes stir fried with aromatic masalas, tamarind and
chilli flakes.
Ingredients
5 large Potatoes
1 tbsp Thick tamarind extract
1/2 tsp Red chilli powder
1/2 tsp Coriander powder
1/4 tsp Turmeric powder
1/2 tsp Chilli flakes
1 tsp Cumin seeds
1 tsp Fennel Seeds
2 Whole dry red chillies
2 pinch Asafetida
2 tbsp Oil
Salt to taste
Method:
- First boil the potatoes with skin. Peel potatoes and cut in cubes.
- Heat oil in a pan. Add asafetida, cumin seeds, fennel seeds, whole red chilli and let them roast for 2 seconds.
- Add coriander powder, turmeric powder and red chilli powder.
- Add potatoes, chilli flakes, salt and toss well.
- Add tamarind extract and let it cook for 2 - 5 min over low flame.
- Turn off fire, garnish with coriander leaves and serve hot.
