Veggie Croquettes


Try crispy, hot and yummy tea -time snack in this monsoon.


Ingredients:


For croquette

1 cup cooked rice
3 bread slices (make fresh bread crumbs)
1 tsp corn flour
1/2 cup mix vegetables (onion, carrot, capsicum and cabbage)
1 tsp oregano
1 tsp red chili powder
2 tsp tomato ketchup
Salt to taste

For Stuffing

1 cup cheese, grated
1 tsp black pepper powder
Few basil leaves

Oil for deep frying

Method:

  • Mix all ingredients for croquette in a bowl.
  • In another bowl, mix all ingredients for stuffing.
  • Divide the mixture into equal balls, fill stuffing in each ball and shape into a cylindrical.
  • Deep-fry till it becomes golden brown in colour, remove on absorbent paper. (You can also roll them in semolina before frying, as I did) 
  • Serve hot with tomato sauce or green chutney.
